Our primary nutrient producer for our microgreens are our perches, gold veils and other big fish. In addition to high quality vegetarian & organic food from a local Swiss producer, we feed them harvest residues from our production. This way we can close further cycles.

Furthermore, it is extremely important to us that our fish live in a habitat as natural as possible and that we treat them with respect. As a result, they happily reproduce resulting in an ever growing population in our ecosystem. In order to keep the balance in the system we will soon start to harvest some of them. Stay tuned!

Shrimps

Freshwater shrimp contribute to the flow of nutrients and make our system even healthier, safer and more diverse. Since they are destruents, they clean the system and thus make an important contribution to the entire ecosystem

Lake Zurich Mussels

We believe in ecosystems that are striving due to its stability & diversity. A few years ago, we found something very odd in the lake of Zurich: a specie of mussels from far away was accidentally introduced by fishing boats across the sea. This specie has made its way along the river up to the lake. As they are invasive and threaten the ecosystem, we collect them out of the lake and sell them through Bianchi to local and high-end restaurants. Win-win.
