Citrus Salad - UMAMI - Inspired by Nature umami

Citrus Salad

vegan, gluten-free


INGREDIENTS (4 servings):

  • 2-3 oranges/mandarins/grapefruit
  • 2 figs
  • 2 shallots
  • 100g seasonal salads
  • 4 tbsp olive oil
  • 2 tbsp of your favorite vinegar
  • 1 tsp mustard
  • 1 bag UMAMI Powermix
  • Salt & pepper to taste

COOKING INSTRUCTION:

  1. Slice the shallots and macerate it in vinegar for at least 30min. The vinegar will take away some of the spiciness of the shallots

  2. Filet the citrus fruits

  3. Slice the figs in mouthpieces

  4. Wash the salads and dry it as thoroughly as possible

  5. Start doing the salad dressing. First drain the shallots from the vinegar

  6. Place the vinegar in a bowl and add double the amount of olive oil

  7. Add a tablespoon of mustard and mix the dressing. Season with salt and pepper

  8. Mix the different salads together and add some UMAMI Microgreens and the drained shallots

  9. Add the dressing to the salad and mix thoroughly

  10. Dress the plates with the salad and garnish them with the citrus fruits and the figs

  11. Garnish the salad with UMAMI Powermix


Tip:

  1. For more crunch you can add some nuts
  2. For a non-vegan version you could add some blue cheese to the salad
